Whatcha Eatin' Wednesday

Good morning, girls!
What's on the menu for this week?

I've shared this before, but I made it this weekend and I absolutely adore it.

P90X Beef & Broccoli

Ingredients:

  • 1/4 cup Low-Sodium Soy Sauce
  • 1/4-1/2 medium Red Onion, minced
  • 1-2 cloves Garlic, minced
  • 1 tbsp Sesame Oil
  • 2 tbsp Rice Vinegar
  • 1 tbsp Ginger, minced (I use ground ginger)
  • 4 cups Broccoli Florets (I use one package of Archer Farms Steam-in-Bag Broccoli Florets)
  • 1 box Taste of Thai Plain Flat Rice Noodles (SuperTarget, Woodman's, SuperWalmart all carry it)
  • 1 1/2 lb Top Sirloin Steak (I just use one steak)

Directions:

 1) Bring 2 quarts of water to a boil
2) Meanwhile, heat a small amount of soy sauce in a large saute pan, add onions and garlic. Saute until opaque.
3) Add beef and saute, turning often (total 7-10 mins).
4) Mix oil, vinegar and ginger. Add to saute.
5) Prepare noodles according to package directions (6 mins boiling), Drain.  Steam broccoli. Add to saute and keep warm.
6) Mix noodles with beef and broccoli and serve.

  1. Just remembered, I didn't report on how I did with my committment for last week. No cheeseburgers! haha :)

This week I've been enjoying a lot of homemade sandwiches- super simple. Bacon, tomato, FF mayo, Sara Lee 45 cal whole grain bread. Or turkey or roast beef. And the staple of Cheerio's (multigrain or chocolate) & skim milk.

Snack on bars (fav at the moment is Clif Builder's Chocolate & it has 20 g of protein), or apples & PB, or frozen berries thawed out, or fresh strawberries, or Planter's pistachio mix that has cashews, almonds, peanuts, & (go figure) pistachios in it.

Getting my workout in with all the moving, unpacking, decorating, painting shelves, etc. Can't wait for it to all be done & be my home-sweet-home!

  2. Maybe you guys already do this, but lately I've been beefing up (not literally) my spinach salad for lunch with yummy things I've never put on there before.

Here are just a few things I've used (not all together):
    apples, cut into small pieces
    canned chicken
    salmon
    fresh broccoli, sliced
    water chestnuts, sliced
    almonds
gorgonzola or bleu cheese crumbles (lightly)

Anyway, I've found that I really like having more flavors and a variety of textures in my salad. It allows me to feel full because I take the time to prepare it and then enjoy all of it too.

  3. Leslie,
Ooooh, thanks for the ideas! I have some spinach in my fridge to use up and I never thought of putting diced apples in it! Yum! Kinda like a healthy waldorf salad....
