Wow, so let me first of all get it out of the way- The Biggest Loser premier last night was GREAT! They push it and work it so hard and see such huge losses. They challenge their past & their bad habits and they make it work. It really inspires me to push it harder. I didn't lose my husband and two kids in a tragic car accident, my mom wasn't a heroine addict, etc. The fact that these contestants can have so much strength despite their obstacles and histories, it means that I have NO EXCUSE! NO EXCUSE AT ALL! What about you? I am going to push the workouts harder and longer this week because of it! Have you ever checked out Kristin's Blog? Just came across it. She has a good and simple smoothie idea that she uses a lot: frozen strawberries, half a banana, skim milk, and a packet of truvia sweetener.

Share with us what your favorite workout foods have been! Our favorites this week have been 6 Week Bran Muffins, a family recipe of my sister-in-law Erianne. It makes a HUGE batch, but the batter keeps for 6 weeks in the fridge, so you just bake a fresh dozen when you need more. It's chock full of fiber and energy. I haven't done a recipe analysis yet b/c I'm waiting to see exactly how many muffins the batch made (I'm thinking 5 dozen- we've baked 2 dozen so far) but someone on MFP with probably a similar recipe has estimated it at about 230 cal each, which seems about right. One muffin in the morning for breakfast and it stays with us and keeps us full all morning.

6 Week Bran Muffins
2 cups boiling water
5 teaspoons baking soda
1/2 cup butter
1/2 cup applesauce
2 cups sugar
4 eggs
1 quart low-fat buttermilk
4 cups whole wheat flour
1 cup ground flax seed meal
1 tablespoon salt
4 cups All-Bran cereal
2 cups bran flakes (40% bran)
2 cups chopped dates
1 cup chopped almonds
Add soda to boiling water and let cool (I set it in fridge). Cream butter, applesauce, and sugar. Add eggs one at a time. Stir in buttermilk, then flour, flax, and salt. Add water and soda mixture. Mix All-Bran, bran flakes, dates, and nuts in a large separate bowl. Add buttermilk mixture. Spoon into well-greased muffin tins (I don't use papers/wrappers) without stirring much. Bake at 375 for 20 mins. Store the remaining batter in a covered container in refridgerator- will keep 5-6 weeks.
Share a yummy good-for-working-out recipe or snack idea!

Those recipes look delicious! I like to add fiber powder to my smoothies as well, to get that in without having to drink it alone. I can't think of a good work-out recipe but I love lately my scrambled eggs in the morning. I saute spinach and red peppers (or whatever kind) in butter and then the eggs and salt and pepper. I could make it even better for myself just using egg whites and oil instead of butter, but I really like the taste of the yokes and butter. Tasty and pretty good for you! I love the protein in the morning to get me going. I loved Biggest Loser!!!!
ReplyDeleteOkay so here's my kick this week. Yogurt! Yay for Yogurt! When you want something sweet without the guilt of calories. My favs are strawberry, strawberry banana, boysenberry, blackberry, strawberry cheesecake, raspberry, and blueberry.
ReplyDeleteHere's another recipe I'm making this weekend:

I'm subbing tofu mix for ricotta cheese mix- yummy stuff! Try it out!
I don't really have "workout foods", but this next week I'm going to be making this squash recipe because Mexican Squash is on sale for $.99/2 lbs.
ReplyDelete8 summer squash cut into slices
1/2 chickenbroth
2 eggs
1 cup shredded cheese
salt and pepper to taste
Mix eggs and broth in bowl
Add the rest and pour into greased baking dish
325 degrees for 1 hour.
I got out my Rachel Ray 365 No Repeats: 30 Min Meals cookbook last week because she has a number of recipes using fresh basil. With the cooler nights coming, our basil plant will start fading. Also, she often uses tomatoes, which we have in our garden, too. Some recipes in the book aren't so healthy b/c she likes to add cheese or put heavy cream in sauces, but the majority of dinners are very healthy. The recipes seem to be hit or miss with my husband (there are some kind of weird ones) but I've liked them and they are quick and easy.
ReplyDeleteThai Shrimp with Basil
3 T. oil
1.5 lb shrimp
2-inch ginger root (or 2 t. ground ginger)
4 cloves of garlic
1/2 t. red pepper flakes
1 red bell pepper, thinly sliced
3 green onions, chopped
1/4 c. tamari or soy sauce
3 T. honey
20 basil leaves, shredded
Heat oil over high heat, add meat and season with salt and pepper. Stir-fry a minute or two, then add ginger, garlic, red pepper flakes and bell pepper. After 2 more min, add green onion. After 1 more min, add tamari and honey. Remove from heat. Stir in basil.
~Serve over shredded lettuce or, if you don't want to get the look from your hubby, white rice.
~Can substitute shrimp with 1.25 lb chicken or pork chops cut into thin strips.
~For frustration-free stir-frying, have all ingredients chopped and measured before you add anything to the pan. (I don't measure the liquids, just eyeball them.)
Mmm, all of your recipes sound so yummy! Jessie, yours made me drool :) Sarah F, I love your side "hubby look" commentary :) My hubby loves shrimp and I think he'd like that recipe a lot. Linds, your recipe blog new background is really cute! That recipe sounds delish! Nicki, I love making eggs, too! I make just eggs w/ shredded cheddar and eat w/ some Frank's hot sauce. Mmm.... Or egg sandwiches w/ fat free mayo on wheat bread.
