Today's the day for sharing all our snack ideas, recipe ideas, etc. Has anyone come across anything new? What have you been eating this week?
Check out this article from MayoClinic.com that re-affirms our rockin' caloric strategy for dropping that 10 lbs in 6 weeks: http://www.mayoclinic.com/health/weight-loss/MY00432
The site has a lot of different pages you can go to for diet plans, quit smoking strategies, exercise tips, healthy lifestyle tips, etc.
Here's their page for healthy recipes: http://www.mayoclinic.com/health/healthy-recipes/RecipeIndex. You can even search for recipes based on the main ingredient. How neat is that?! You can also search by serving size, by cooking type, by meal type, etc. And Cadie & Val, there's a meatless section, too.
I wanna try the vermicelli tossed with roasted asparagus and tomatoes :)

For breakfasts I've been having ONE serving of chocolate cheerios w/ skim milk & a sliced banana in it. For lunches I've been having a rose apple sliced w/ 2 T almond butter. For snacks I've been having Protein Plus chocolate chip cookie dough bars or Odwallah strawberry pomegranate bars. For dinners I've been having Noodles & Co small Mac & Cheese w/ parmesan crusted chicken breast, or Biggest Loser's sweet & sour chicken (thanks, Tara!), or P90X's beef & broccoli stir fry w/ rice noodles. Yummy! And leftovers are great for lunch the next day. Later on this week I'm going to make Feta-topped chicken, and this weekend I'm going to make the Thai pasta w/ chicken (thanks, Janis!). JoAnn, these are all recipes I've posted on here before. If you click on the recipes link in the cloud on the left sidebar, then you should be able to find them. If you can't, I can email them to you :) Welcome aboard! Glad to have you!
ReplyDeleteI am focusing uber-hard on tracking everything I eat. I'm owning up to every bite. So far so good! 2 days down :) Do any of you want to be "friends" on MyFinessPal? Amy C & I am, so when I log into MFP, it shows me if she was under her calories or over her calories & tells me to congratulate her :) Or it tells me if she hasn't logged in for a day or so & tells me to offer encouragement. Kinda cute! And Amy C. is rocking it, by the way! If you do wanna be little MFP buddies, my screen name is SarahW8.
Can't wait to hear some new recipes! I need something fresh in my menu!
Not really a new recipe, but a new twist on a recipe I posted before. When my mom was visiting recently, she bought some of those sandwich thins that have been posted about. I really liked the idea of loading my sandwich with lettuce, onions, tomatoes, a little lean protein and cheese and knowing that it was still pretty low calorie with those sandwich thins. So ... I decided to make my own (of course - if you know me - that's just what I do!). I made my whole wheat bread recipe yesterday and turned part of the batch into my own sandwich thins!
ReplyDeleteI just ate a fantastic spinach salad with strawberries, sprouts, and leftover chicken!
ReplyDeleteSunday I roasted a chicken. We had chicken with Asparagus pesto risotto. I've been eating chicken for lunch the last couple of days.
Last night I made white beans, broccoli, and pork chops.
For you iphone and itouch users, I downloaded Jamie Oliver's app. It was $4.99 but I think it was totally worth it. Along with 55 fantastic recipes, he had video's on how to do things like make risotto, knife skills, fish buying tips. principles of superb salads, and more.

I made one of my summer favorites last night. It's a shrimp pasta salad:
ReplyDeletesalad sized cooked shrimp
chopped celery
sliced black olives
tri-colored rotini
mayo
Old Bay seasoning
black pepper
Combine ingredients to your taste and enjoy!
Going to try this! (from the site you listed Sarah, thanks!)
ReplyDeleteBroccoli, garlic and rigatoni
Ingredients
• 1/3 pound rigatoni noodles ,1 cup broccoli florets (tops), 2 tablespoons Parmesan cheese, 2 teaspoons olive oil, 2 teaspoons minced garlic , Freshly ground black pepper, to taste
Directions:
Fill a large pot 3/4 full with water and bring to a boil. Add the pasta and cook until al dente (tender), 10 to 12 minutes, or according to the package directions. Drain the pasta thoroughly.
While the pasta is cooking, in a pot fitted with a steamer basket, bring 1 inch of water to a boil. Add the broccoli, cover and steam until tender, about 10 minutes.
In a large bowl, combine the cooked pasta and broccoli. Toss with Parmesan cheese, olive oil and garlic. Season with pepper to taste. Serve immediately.
Thought this looked yummy! :)
Oh that sounds yummy Nikki! I'm super excited because we finally bought a food scale which has been lovely.
ReplyDeleteFor breakfast I have a smoothing involving 1c of nonfat frozen strawberry yogurt, 1/2 pineapple, 1/2 fresh strawberries, 1 cup of orange juice. It is about 220 calories, is delicious and tides me over until my late morning snack.
For my late morning snack I have been eating South Beach Protein bars. Only 120 calories and are filling and yummy.
I have been doing a butter noodle dish with chicken. For either dinner or lunch depending on my mood. (depending on what i put in it varies from 290 to 350 calories)
1 cup of cooked rotelle noodles
1/2 tbsp of butter
2 oz of chicken
1/4 broccoli
2 tbsp of parmesean cheese
Add in Italian herbs from a lovely bottle I was given by the grandparents. Some garlic and salt and pepper (not much needed with the herbs but can be a nice addition)
Here is a DELICIOUS recipe. Beware-you'll have to cut yourself off with 1 serving. Good stuff!
ReplyDeleteFresh Tomato, Sausage, and Pecorino Pasta
Ingredients
• 8 ounces uncooked penne
• 8 ounces sweet Italian sausage
• 2 teaspoons olive oil
• 1 cup vertically sliced onion
• 2 teaspoons minced garlic
• 1 1/4 pounds tomatoes, chopped
• 6 tablespoons grated fresh pecorino Romano cheese, divided
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
• 1/4 cup torn fresh basil leaves
Preparation
1. Cook pasta according to package directions, omitting salt and fat; drain.
2. Heat a large nonstick skillet over medium-high heat. Remove casings from sausage. Add oil to pan; swirl to coat. Add sausage and onion to pan; cook 4 minutes, stirring to crumble sausage. Add garlic; cook 2 minutes. Stir in tomatoes; cook 2 minutes. Remove from heat; stir in pasta, 2 tablespoons cheese, salt, and pepper. Sprinkle with remaining 1/4 cup cheese and basil.
Wine note: Italian sausage craves a clean-tasting wine with the substance to complement the rest of the dish without overwhelming it. The smoky 2006 San Lorenzo Verdicchio Vigna Delle Oche ($23) is a great choice. -Gary Vaynerchuck

Everything sounds so yummy; I can't wait to try them! I am excited for summer to come because we are going to put in a mini garden, I don’t know everything I am going to plan but tomatoes and onions are a must. I can’t wait to have fresh veggies growing in my own back yard!
ReplyDeleteLately I have been putting sautéed mushrooms and onion on everything. For dinner last night we had hot ham and cheese. I use turkey ham and heated it in the same pan and at the same time as I was sautéing my mushrooms and onions. Once the mushrooms and onions were done, I just topped the meat with cheese (pepper jack for me and swiss for my boyfriend) and cover to let the cheese melt. Once melted, I put it on wheat bread, and it was amazing. This was quick, easy, and delicious; although next time I would put sautéed peppers on it.
