Sooo, share w/ us what you've been eating! Be specific so we can all get great ideas on things to eat, whether they're store-bought treats or home made meals.
Sweet Potato and Apple Casserole
1. Preheat the oven to 350 degrees. Place the sweet potatoes on a piece of aluminum foil and roast until they can be easily pierced with a fork, about 1 hour. Let cool slightly.
2. Trim the ends and pull off the peels; slice into 1/2-inch rounds.
3. Butter a small (3-1/2-quart) casserole dish with half the butter. In a bowl, stir together the cinnamon, ginger, and allspice. Arrange half the apple rings and sweet-potato rounds in alternating layers in the dish; sprinkle with half the spice mixture and half the maple syrup. Layer in the rest of the apples and sweet potatoes, ending with the apples. Sprinkle with the remaining spices, drizzle with the remaining syrup; dot with the rest of the butter.
4. Cover and bake until the apples are very tender, about 45 minutes.

Here's another good one that I haven't made in a long time but plan on making tonight. I got it off an Uncle Ben's rice box. We don't do the rice at all in this recipe, though. So the calories are going to be less than listed here. We just do the chicken & snow peas.
1. Prepare rice according to package directions.
2. Heat oil in large skillet. Add chicken breast and cook for 3 to 4 minutes on each side. Add juice from pineapple to chicken in skillet just before chicken has finished cooking.
3. Mix pineapple chunks, marmalade and soy sauce. After pineapple juice has evaporated from skillet, add marmalade mixture to chicken. Cook until sauce is a glaze. Remove from heat and serve with rice.

I've shared this one before, too, but it's another big favorite of mine, also from Fitness Magazine (recipe from Natalie Coughlin, the Olympic swimmer). Made this for lunch on Sunday. THIS time I had actually gone out and bought an iron skillet so I could do it properly and not explode my Pryex pie dish all over the kitchen :)
Asparagus Frittata
Serves 4
Ingredients:
6 eggs
salt & pepper to taste
2 T grated parmesean cheese, plus extra for garnish
1 T olive oil
1 T butter
1 large leek, washed, thinly sliced (looks like a giant green onion for those who don't know what it looks like, usually by the green onions at the grocery store, tastes like a really mild green onion- maybe a little sweet)
1 fresh bunch of asparagus, washed, chopped into bite size pieces
2 cups baby spinach, washed
Directions:
1. Preheat broiler and set rack 6" from heat.
2. Crack eggs into bowl, salt & pepper, and parmesean. Mix & set aside.
3. In iron skillet on stove top, heat the oil & butter.
4. Add the leek, saute for 1 min stirring occasionally.
5. Add the asparagus, saute for 3 minutes or until almost fully cooked.
6. Add the spinach, season w/ salt & pepper if you want. When spinach is almost fully wilted, spread this veggie mixture evenly across the bottom of the skillet.
7. Pour the egg mixture over the top and tilt the pan so the veggies are all covered. Cook until the edges of the eggs start to come away from the side of the pan.
8. Put the pan in the oven to broil for about 5 minutes, until the frittata is lightly golden and the eggs are fully set.
9. Immediately turn the frittata out upside down onto a plate. Garnish w/ the extra parmesean if you want. Cut into 4 slices & serve.

Here's another yummy that the hubby made for me a few months ago that I just remembered, also from Fitness Magazine:
Stuffed French Toast
1/2 teaspoon vanilla extract
1/8 teaspoon apple pie spice (we used pumpkin pie spice b/c we didn't have this on hand)
Nonstick cooking spray
Directions:
Combine the cream cheese and 2 tablespoons jam. Make a slit in each slice of French bread to form a pocket; fill each with about 1 tablespoon of the cream-cheese mixture. (Since we were using thin already sliced bread, we used two pieces of the wheat bread and put the cream cheese mixture between it like a sandwich)
In a small bowl, combine egg whites, egg, milk, vanilla, and apple pie spice. Lightly coat a nonstick griddle with cooking spray; heat over medium heat.
Dip the bread into the egg mixture, coating both sides. Place slices on the hot griddle. Cook about 3 minutes or until golden brown, turning once.
Meanwhile, in a small saucepan, heat the 1/2 cup of jam until melted, stirring frequently. Pour over French toast.

As far as snacks, I haven't been too creative lately. Just enjoying my daily late morning snack of a Pacific Rose apple sliced w/ 2 T crunchy all natural PB. I've also been enjoying Marin's dressed up cereal idea for breakfasts as an alternative to eggs. This morning (short on time mornings :) ) I had 1 cup of special K strawberry w/ a sliced up banana and half cup of skim milk. I still like my protein shakes & protein bars in the afternoons, too. I found a protein bar that I'm pretty satisfied w/ after trying pretty much every one out- Clif Builder's. Still has a little soy and I'd like just whey, but for 20g protein, it's mostly all-natural ingredients, as opposed to the really sugary & processed alternatives out there. Some greek honey-flavored yogurt is a good post-dinner dessert.
So excited to hear all your great ideas & recipes!

I love how you post the pictures to go with the recipes Sarah. Makes all the difference to me. Having said that, here's my recipe with no picture:
ReplyDeleteCheezy Broccoli Soup (6 servings)
1 1/2 c. carrots
2 1/2 c. potatoes
1 med. onion
1 3/4 t. salt
3 1/2 c. water
3/4 c. cashews
6-8 c. fresh broccoli
Combine 1 1/2 c. carrots, 1 1/2 c. potatoes and one med. onion, and salt into 3 1/2 c. water. Heat until vegetables are soft. Add cooked ingredients to blender with cashews. Blend to make cheezy sauce, and return to pot. Continue to warm. Place remaining potatoes, carrots and broccoli into a steamer, and cook to desired firmness. Stir steamed vegetables into cheezy sauce, and serve.
This is a great recipe I found that works great for our dairy allergy family. The soup is surprisingly good and all the ingredients are whole foods! The only non-vegetable ingredients are the salt and cashews!
I love cheese broccoli soup! I’m definitely going to try this one. But here are a few of my favorites from the past week.

Spicy black bean burgers
2 diced jalapenos
1 small onion diced
1 19oz can of black beans
1/2cup bread crumbs
1/8 tsp salt
½ tsp garlic powder
1 egg
Coarsely chop beans with food processor, it should be chunky. Add onions, egg, and jalapenos. In a small bowl mix bread crumbs, garlic, and salt. Add bean mixture and mix. Shape into 4 patties. Cook in frying pan until browned on each side.
I added more peppers to this since I like things spicy. It tasted great. I am thinking this would be better in tacos or quesadilla, which I will try since I have left overs!
We just had a really yummy apple dip yesterday that is pretty healthy.
ReplyDelete2/3 cup lowfat vanilla yogurt
2 tsps. honey
1/3 cup applesauce
3 oz. canned peaches drained

Last night we ate a great spicy peanut pasta, that was really good. I usually double it so we can eat the leftovers for lunch.
Oriental Noodles with
Spicy Peanut Sauce
1/2 pound of Oriental-style noodles (if I can't them, I just use thin spaghetti or linguine)
1 1/2 tablespoons of creamy peanut butter
2 1/2 tablespoons of olive oil
2 tablespoons of soy sauce
2 tablespoons of sugar
2 teaspoons of white vinegar
1/2 teaspoon of sesame oil (I add an extra drop or two)
1/4 teaspoon of ground red pepper (I use a little extra)
1 tablespoon of minced green onion
Mix sauce and pasta and serve. I usually add peas and shredded carrots to mine.
Here is a great recipe we tried this week. I wasn't real sure about it but gave it a try anyway and really really enjoyed it!! I also sprinkled a little fresh Parmesan cheese on top.
ReplyDeleteAlso really good the next day as leftover lunch!
Italian Skillet
Ingredients:
14 oz. veg. broth
8 oz. orzo pasta
15 oz. black beans

2 T. fresh parsley (optional and I leave out)
Directions:
Cook orzo pasta in vegetable broth until al dente. Add the rest of ingredients and heat 5-10 minutes longer or until veggies are cooked.
Thanks for all the great recipes! I know where I am going to look when making up next weeks menu!
So I have to say that meal planning is really one of THE hardest parts for me in eating healthy. It always seems to take a back seat to everything else I need to do in a day. I finally got a bit more organized and it seems to be helping, at least this week. On a metal board I picked up at Home Depot I've got my magnetic spices. I squished them all together and found some space for my planning. I put a list there of foods that we eat often (things that I know how to make without a recipe, as well as about 5 meals I want to try) With a dry erase marker I then put the days of the week and filled in what we were eating each day of the week. Having it right in front of me in the kitchen is really helping. Having a list of meals there so I don't have to think real hard is helpful as well when I write out the week. I know some of you already do this, so thanks for the advice on making it! My plan to incorporate new meals is to type up my "stand by" recipes (put in page protectors in a 3 ring binder) and then put recipes in the back(inside a page protector) of what I want to try. If we like it then I can incorporate it in to the repertoire. (think I stole that idea from you guys as well....) I know, sounds simple, but this has been sooooooooooooooo hard for me! Here's a recipe we're trying tomorrow from the Biggest Loser cookbook. Hopefully no one else has posted it! All of your recipes look yummy!
ReplyDeleteNew Orleans Rubbed Chicken with Apricot-Mustard Sauce
(looks a little spicy, so I might need to tone it down a bit)
Ingredients:
1 Tablespoon dried thyme
1 1/2 teaspoons ground black pepper
1 teaspoon garlic powder
1/2 to 1 teaspoon cayenne, to taste
1/8 teaspoon salt
4 small (1/4-pound) boneless, skinless chicken breasts, trimmed of visible fat
1 teaspoon extra-virgin olive oil
1/3 cup apricot 100% fruit preserves
2 tablespoons spicy brown mustard
Preheat the grill to high heat. In a small bowl, combine the thyme, pepper, garlic powder, cayenne, and salt. Mix to blend.
Place the chicken on a large plate or platter. Drizzle with the oil. Rub to coat both sides of the chicken evenly with the oil. Sprinkle the reserved seasoning mixture over both sides of the chicken. Rub to coat evenly. Cover with plastic wrap. Refrigerate for at least 10 minutes for the seasonings to flavor the chicken.
Meanwhile, spoon the preserves into a small microwaveable bowl. Cook on low power in 15 second intervals until melted. Stir in the mustard until well blended. Set aside.
Place the chicken on the grill and reduce the heat to medium. (If it is not possible to reduce the heat, cook the chicken away from direct heat.) Cook for 3 to 5 minutes per side, or until no longer pink and the juices run clear. Serve each breast with 2 1/2 tablespoons of the reserved sauce spooned over the top.
