Whatcha Eatin' Wednesday
Good morning, ladies! With this cold winter weather finally upon us
today, it has me thinking about soups & stews! Do you have any cold
weather healthy favorites?
I made this veggie soup recipe this week that has a lot of flavor and
is really yummy.
6 large green onions
2 green peppers
2 cans of diced tomatoes
3 carrots
1 container mushrooms (10 oz)
1 bunch celery
Half head of cabbage
1 pckg Lipton Onion Soup Mix
2 cubes beef bouillon
48 oz can of V8 juice
Pepper & Garlic salt to taste
Slice all veggies into bite size pieces. Saute just the green onions
in cooking spray in your soup pot. Then add green peppers and cabbage.
Finally add all the ingredients and up to 8 cups of water. Cook for 2
hours.
It's really hit the spot this week-even the hubby likes it :)
And did anyone see Biggest Loser last night? I really want that veggie
chili recipe that they filled the baked potato with- looked delicious!!!
So...what have you been eating this week?

ReplyDeleteI've enjoyed black beans this week. Here's a delicious recipe:
ReplyDeleteBlack Bean Soup
2 tsp. olive oil
1 onion, chopped
1 carrot, chopped
1 red pepper
4 garlic cloves, minced
2 tsp. cumin
1-2 tsp. green chiles
2 cans black beans, drained & rinsed
1 can chopped tomatoes
3 c. chicken broth
Saute the onion, carrot, pepper & garlic for 6 minutes. Add remaining ingredients & bring soup to boil. Reduce heat and simmer 15 minutes. Puree half of the soup in blender (or use an immersion blender) and return to pot. Simmer until slightly thickened, about 15 more minutes. Season with salt, pepper, & 1 more tsp. green chiles.
I bought an immersion blender this week, just for this recipe. Can't wait to use it! Enjoy!
I love soup and stew weather! Thanks for the recipes... I'm always looking for healthy soups and such...
ReplyDeleteSarah wanted this recipe I mentioned last week, so here it is:
Stuffed Pepper Soup
2 green peppers chopped
1 pound lean ground beef or ground turkey
1 can diced tomatoes (i like the petite diced ones)
1 can tomato sauce
1 beef boullion cube - i use 2 ;)
3 cups of water
1 cup cooked brown rice (I use the microwave minute rice brown rice cups - don't have to wait for it to cook!)
Italian Seasoning to taste
Saute peppers in olive oil spray until tender - add ground been until browned (crumbled). Add tomatoes, tomato sauce, water, boullion cube and let simmer for 10-15 minutes. Add cooked rice at the end.
If you follow it by Weight Watcher points... it's 1.5 point per cup! And oh so good!
Mmmm, I printed off both those recipes to try next week. Yummy! Thanks!
ReplyDeleteGreat recipes ladies!! I don't make soup very often because my husband informed me it is not a meal. For lunch I do like to heat up Progresso's sante fe chicken soup! I am not a fan of rice but do like it in this soup. I have made a pumpkin shake that Sarah shared the recipe for that I am in love with. Thank you!! I also bought low fat cheese sticks and whole wheat ritz crackers for snack this week. Have a wonderful day!!
