Whatcha Eatin' Wednesday?

Full on recipe swap :), girls! Share your favorites that you haven’t shared with us yet. Share something you found recently that you are going to give it a shot soon. Any delish new snacks you’ve tried?

For breakfasts, I’ve been enjoying a lot of instant oatmeal (strawberries & cream is my fav) or an egg sandwich on whole wheat bread w/ fat-free Kraft mayo & pepper. This week I have been LOVING the late morning snack of a sliced Laughing Cow babybel cheese round on top of 7 reduced fat Triscuits (Thank you, Amy F. & Sarah F., for the idea!!!!). Yoplait fat free yogurts are always great (white chocolate strawberry is my fav). And I’ve been good w/ getting in my cold glasses of water the last 3 days, which is UNHEARD of for me- so yay! For dinners this week, we had asparagus frittatta for dinner Monday night, which we’ve had a few times before (recipe below), and it was so yummy. I ate a quarter of the dish and my hubby ate three quarters of it :). Last night I made chicken noodle soup by boiling 3 chicken breasts in a bit of water (then setting one aside in a baggie in the fridge for the hubby’s spinach salad today), slicing, then tossing in 12 ounces of Reames frozen homestyle egg noodles. Way simple but it hit the spot. Tonight I’m going to try this Brussels sprout slaw recipe (recipe below). I also tossed below a dessert/appetizer recipe for Strawberry Cheesecake Bites for entertaining that I made last week- favorite of mine! I can’t wait to hear all your recipes and give them a shot!

Natalie Coughlin’s Asparagus Frittatta (from Fitness Magazine):  Difference is I double the freshly shredded parmesan and only use one package of asparagus instead of two (the Target brand Archer Farms frozen steam in the bag kind works great- but I’ve also used Fresh before- just takes longer to cook). Hubby likes it w/ Frank’s Hot Sauce as a condiment.  You could really toss any veggie in there that you want- I'm sure mushrooms, onions, or peppers would be good!

Brussels Sprouts Slaw w/ Mustard Dressing & Maple-Glazed Pecans (from Epicurious.com)

Strawberry Cheesecake Bites (don’t know where it’s originally from but it’s on lots of sites) Difference is I use fat-free cream cheese and no lemon peel.

  2. Still not feeling fabulous today. I'm making chicken noodle soup that I crave when I don't feel well. I've been liking the snack packs of Craisins lately for quick snacks. They have them in 100 calorie packs, so that's nice! These recipes look great! I got to try the strawberry cheesecake bites from bookclub the other night. Everyone loved them!!!!

  3. I am going to have to try the asparagus dish!! How do you know if a pan in able to go on the stove and in the oven?? I made a pork chop sirloin dish in the crockpot last night and then served it over brown rice it was really good and super easy! I have found I love oatmeal after I workout with honey, cinnamon, cranberries, and dates. Then I toast arnold's sandwich thins to go with it. I also have included the reduced fat triscuits into my snacks with a honeycrisp apple!

  4. Abrey- sorry, I should have explained. I used a pyrex pie dish. The stove top heat is only low-medium heat, so I took the chance on it, and it worked out great. Last time I made it I used a metal round cake pan and it worked fine, too. Easier to get out of the pyrex, though. So that's Abrey AND Meghan who like the Arnold's sandwich thins- guess I'm going to have to check them out!!! Mmm, apple & triscuits sounds good, too! I never think of these things on my own, he he :)

  5. Oh my, those cheesecake bites look amazing!!!!! I absolutely LOVE cheesecake and that has been a huge temptation for me when I go out. Looks like I have a great alternative now. Thank you! Also, my other weakness is cookie dough ice cream but I found these small Ben and Jerry containers that are perfect for when I get a craving but dont want to eat too much ice cream.

    Also a tip that I have learned, for my lunch for the week on sunday I prep all my lunches. I take the time to cut up all fruit and put them in containers and so forth. Plus I always have extra so if I get a craving late at night I have a healthy snack right at my fingertips instead of junk food.

  6. Sarah, thanks for posting the pictures of the foods - all look absolutely mouth watering!
    I have a pretty good recipe that tastes like a guilty dessert, but it's actually really healthy and super easy:

    Stawberry Salsa

    16-18 fresh strawberries
    1 apple
    2 kiwi
    1 T. jelly (optional)
    3 t. brown sugar (optional)

    Chop all these up and stir them together. I use a pampered chef chopper and that works great. I leave out the jelly and brown sugar all the time and it still tastes awesome!
    Serve this with your favorite pita chips or, my favorite, Flat Earth crisps. Yum! Yum! Yum! And, you're getting in a good serving of fruit!

  7. Last weekend I made a great fall treat: Michigan Baked Oatmeal. My mom and I first had it when we stayed at a bed-and-breakfast as a special mom-daughter weekend when I was in college. I grew up in Michigan, where 900 million apples and 250 million pounds of cherries are grown annually.
    If you're not an oatmeal person, I think I can convince you with this! Warm, chewy, sweet comfort food for fall/winter and you get your fiber. It's about 250 calories, a bit more than my usual bowl of oatmeal with fresh fruit (180-200 cal depending on type of fruit). It makes about six servings, so my husband and I have it on the day I make it, then I've got my oatmeal already made, for super-easy mornings in the week ahead. :) Add a little milk when you re-heat it in the microwave.

    Michigan Baked Oatmeal
    * 2 cups old-fashioned oats
    * 1/2 cup sliced almonds
    * 1/2 cup dried cherries
    * 1/4 cup brown sugar
    * 1 large apple, unpeeled and diced
    * 4 cups milk
    * 1/2 teaspoon almond extract
    Preheat oven to 400°. Combine all ingredients in a 3-quart dish or 9x13 pan. Bake uncovered for 35-45 minutes. (Hint: Pan will be easy to wash if you soak in soapy water for 30 min first.)

    P.S. Like the strawberry-apple-kiwi combo, Meghan!
    P.P.S. Frittatas are great with any leftover vegs you have in the fridge. I use the recipe in the Fannie Farmer cookbook. It's like an omelete that you don't have to fuss with. :)
