Whatcha Eatin' Wednesday?
Good Morning, Healthy Ladies!!!!
Thanks for all your great tips & tricks on yesterday's post. I hope we're all ready to finish this last week and a half of the challenge out stronger than even the first week and a half! I know we can do it :)
So, whatcha eatin', girls? A beloved and dear stalker of this blog posed this question to me recently, "Have you ever on the blog just asked people to run down what they ate the entire day?" I believe she was trying to get at all of us sharing everything we eat to offer ideas for those who have no idea what to eat. I told her about the ability to click on the left sidebar of the blog on the word Recipes in the topic cloud and that it will then pull up every Wednesday post where we talk about food, snacks, and recipe ideas. But today, can you girls post what you ate any given day from first thing in the morning to last thing at night? Just consider it Healthy Eating 101 :) I think it will give us all great ideas. And of course, share yummy new recipes, too :) And if something's particularly a big hit with your entire family at home for dinner, those recipes are more valuable than gold to us all!
Last night I tried a new recipe from the P90X nutrition book, Pear Granola Muffins. Baked 10 last night and had one for breakfast this morning w/ a greek yogurt. YUMMY! Super moist, lots and lots of flavor, no need for butter spread on it. Highly recommend it! (if you click on it, it will get bigger)

I am really excited that you are having us do this, Sarah! Seeing what you ladies eat during the day will give me some great ideas! So here is what a typical day is like for me.
ReplyDelete5:30 am Pre-workout snack: 1 Slice of wheat toast with peanut butter
7:30 am Post-workout Snack: protein drink mixed with frozen berries and pieces of yogurt (I just found these packets at Costco and they are really yummy!)
9:00 am Breakfast: 1 packet of maple and brown sugar instant oatmeal with a slice of wheat toast.
Noonish Lunch: Salad with cut up ham or turkey with a light or FF dressing.
3 pm Mid-afternoon snack: I too love the Babybel cheese and eat mine with RF wheat thins
6 pm Dinner: I just tried a new recipe this weekend for our Superbowl party called Street Chicken Tacos with rice that was so yummy and a hit with my family and here is that recipe.
Street Chicken Tacos
4-6 boneless chicken breasts trimmed of fat
1 large can mild green chili sauce (29 oz)
2 small cans mild el pato jalapeno sauce (this is Mexican tomato sauce)
1/2 cup cilantro (or desired amount, I used less)
1 sweet onion diced (I am not a big onion fan so I used half)
1 1/2 cup brown sugar
corn tortillas
RF cheese
FF or light sour cream
avocados (of course :) )
Boil chicken for 30 minutes or until it falls apart. Shred chicken with fork and knife. While boiling the chicken, combine the green chili sauce, el pato sauce, onion and brown sugar in a crock pot. Place shredded chicken in the sauce and cook on low for 3-4 hours. Serve rolled up in corn tortillas (I warmed these up on my skillet) adding rice in the tortillas or on the side, cheese, sour cream and avocados.
Chicken Flavored Rice
2 cups rice
4 cups of chicken broth (which equals almost 2 cans so just make up the difference with water)
4 Tbsp butter
1/4 tsp garlic salt
1 tbsp instant chicken bouillon granules or cubes
1 tbsp dried parsley flakes
1 can black beans rinsed and drained
Cook all together in a rice cooker (it takes approx 40 min to cook) with the EXCEPTION of the black beans. After cooking the rice mix the beans into the rice.
Oh and I almost forgot. I usually eat all my meals with a glass of water except breakfast I will have milk and then I really really try to get in more water throughout the day and I also try and remember to take my vitamins in the morning.
Okay here is my food log from yesterday on myfitnesspal:
ReplyDeleteBreakfast: Kashi GoLean Crunch with skim milk
Lunch: A piece of Spinach Artichoke Lasagna (leftovers) and half an orange
Dinner: Taco Soup (Black and Kidney Beans, corn, tomoatoes, and tomato Sauce--no meat) with a teaspoon of light sour cream and a 1/4 of an avacado.
Snacks: Sliced pita bread spread with hummus, reduced fat triscuits, and a dill pickle.
Also I made some great muffins and waffles this week. I ran out of wheat flour so I've been making my own oat flour in the blender and it's been delicious, I am a fan! I served the waffles with bananas and nonfat reddi whip.
Banana Oat Muffins
1 1/2 cups all-purpose flour
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup unsweetened applesauce
1/2 teaspoon vanilla extract
1 cup mashed bananas
Combine flour, oats, sugar, baking powder, soda, and salt.
In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.
Oat Waffles
1 cup all-purpose flour
1 cup oat flour
4 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
2 eggs
1 3/4 cups fat-free milk
2 tablespoons canola oil (I used olive oil, but I bet you could use applesauce)
1 teaspoon vanilla extract
In a bowl, combine the first five ingredients. Combine the eggs, milk, oil and vanilla; stir into dry ingredients just until combined. Pour batter by 1/2 cupfuls into a preheated waffle iron; bake according to manufacturer's directions until golden brown.
Nice looking muffin Sarah! I'm going to have to try those! All these other recipes look great too, thanks guys! I'm not real proud of my foods lately so I'm not going to list mine, I am however extremely motivated by your wonderful eating! The staples I do love are: any kind if egg, protein shakes, string cheese, oatmeal, wheat thins, rice, all colors of peppers, carrots, spinnach, broccoli, asparagus, chicken, avacodos, any fruit or berries, and wheat bread. I usually keep most of that in the house so there really isn't any excuse to grab the unhealthy things. I need to avoid the chocolate additions that have been in our
ReplyDeletehome lately, but the chat with the hubby helped with that I think! :).
I know this is a food day but I just wanted to add a bit about motivation and exercise. I tried out my yaktrax today for the first time in the snow and they were amazing! I got a great workout and it was a blast to be out in this blizzard we've been having! I'm already looking forward to tomorrow! The other bit I wanted to share was about my older brother Travis (Kims husband by the way). He started a program called cross fit and has been doing GREAT! I think it's a national chain, but he goes to one in Ogden Utah. Anyway I have been really motivated by his committment to it! He has quite a commute to work each day and doesn't get home until pretty late each night. The only time he can fit workouts in is at 5:30 in the morning! He's really challenging those excuses and DOING IT! Six days a week at that! just had to share with you guys how proud I am of him! Check out their program at www.crossfitogden.com. Have a fabulous day ladies and hope your eating goes great!
So here is what I had yesterday:
ReplyDeleteBreakfast: Koshi Go Lean Crunch with Skim Milk
Morning Snack: An orange, green tea
Lunch: Flat Out Light Wraps Italian Herb, with ham, cucumbers, tomatoes, bell peppers, and a little shredded cheese
Afternoon Snack: Wheat thins and light cottage cheese (yes I dip the wheat thin in cottage cheese)
Dinner: BBQ (recipe below) on an Arnold Sandwich Thin with shredded cheese glass of Crystal Light
Of course I have several glasses of water throughout the day.
BBQ Recipe - I added red bell peppers as well and a little bit of garlic powder.
Yield: 12 servings (serving size: 1 sandwich)
Ingredients
• 3/4 cup chopped onion
• 1/2 cup chopped green bell pepper
• 3/4 pound ground round
• 2 cups no-salt-added tomato sauce
• 2 tablespoons tomato paste
• 1 tablespoon prepared mustard
• 1 teaspoon chili powder
• 2 teaspoons Worcestershire sauce
• 1/2 teaspoon salt
• 1/2 teaspoon sugar
• 1/2 teaspoon dried oregano
• 1/8 teaspoon black pepper
Preparation
Heat a large nonstick skillet over medium heat. Add first 3 ingredients; cook until beef is browned, stirring to crumble. Stir in tomato sauce and next 8 ingredients (tomato sauce through black pepper); reduce heat to medium-low. Cover and cook 15 minutes, stirring occasionally. Spoon 1/4 cup beef mixture over bottom half of each bun. Cover with top halves.
Another find this week is Weight watcher buttermilk buscuits. I Love bread, so these were great to make. I made some with whole wheat flower as well as all purpose, and both turned out great. My boyfriend added butter to his and he said they reminded him of KFC buscuits.
Ingredients:
- 1 cup flour
- 1/2 cup skim milk
- 2 tablespoons reduced-fat mayonnaise
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
** If you can find a fat free buttermilk to use instead of the skim milk, do that…it adds a nicer flavor to the biscuits.
Directions:
Preheat oven to 375 degrees and spray a 6 cup muffin tin with cooking spray. Stir ingredients together and divide evenly between 6 muffin cups. Bake for 12 minutes or until golden brown.
Nicki, thanks for saying all of those nice things about your brother, my husband :) I am proud of him too! Just this morning he weighed and has lost 12 lbs! But it actually looks like he has lost even more because of all the inches he is losing. Everything is tightening up for him and I am just so impressed by his dedication!
ReplyDeleteOne of the things his trainer has challenged them to do is to take refined sugar out of their diet. This has been really hard because he loves sugar and so in the beginning he slipped here and there but then he had to pay dearly by doing this exercise called a burpee! You jump down into a pushup and then jump back up and clap your hands over your head. Well this particular day he thought he would only have to do 15 burpees but it turns out that he had to do his plus anyone else who ate sugar as well! He ended up having to do 70 burpees! This cured him right away and he hasn't had sugar for 2 weeks straight! I am so inspired by him and would like to try taking on this challenge with him.
He has also beat a personal goal by running without stopping and then just a week ago he beat the record by lifting the most weight...412 lbs! Here is a picture of him if any of you would like to check it out!

Sliced Ham
Cheddar Cheese
Iceberg lettuce
Dinner:
White Chili

Here is a recipe for White Chili that I LOVE-- and I liked it even before I was on a diet. I've shared with several of you already, but I made it recently and realized actually how healthy it is. I put all of the ingredients into MFP and as best as I can estimate, there are 260 calories in each generous serving.
White Chili (serves 6)
- 2 cans Great Northern beans
- 2 cans green chiles, diced
- 4 boneless skinless chicken breasts
- 1 medium onion, chopped
- 2 cups chicken broth (I make broth from water & bouillon cubes)
- 1 clove garlic
- 1 10 oz. package corn, frozen
- 1 tsp. salt
- 1 tsp. oregano
- 1/4 tsp. cayenne pepper
- 1/2 tsp. ground pepper
I put everything except the spices in a slow cooker for 4-6 hours on high or 8 hours on low.
Once it has cooked for about 3/4 the time, shred the chicken breasts.
I add the pepper(s), salt and oregano right before serving it.
I should mention that you can serve it over tortilla chips with grated cheese, sour cream and guacamole dip-- to your significant other if you'd like to, but honestly, it has a great flavor and is very warm and filling on its own, without the cheese, etc. Especially on cold winter days. Oh and I halve the recipe for us, since I'm not cooking for too many.
Yum, ladies! I printed out all those recipes to give them a try :) Kim, holy moly, that looked like a TON of weight!!!!! Great work to you and your hubby- it's a team effort!
